Four stages, one batch

Only the heart makes it to the bottle.

A still run comes off in three parts, heads, hearts, and tails, in that order. Only the hearts, the clean middle third, ever reaches a bottle. The rest is discarded, not blended back in to stretch the batch.

STAGE ONE

Mashing

Grain cooked and fermented into a low-alcohol wash. Nothing here is drinkable yet, it's just the raw material for the still.

STAGE TWO

The cut

Heads, hearts, and tails come off the still in that order. Only the hearts, the clean middle third, go on.

STAGE THREE

Aging

Years in oak, not weeks. The barrel does more to the final flavor than the still does.

STAGE FOUR

Bottling

Cut to proof with water, filtered, and bottled. The last step, not a shortcut past the first three.
